This ws similr to wht ourre in e LAB inoulte silge wi omintion of L. plntrum in is uy wi rpi reution of e ph of e silge ompre to t of e uninoulte silge. The min purpose of heterofermenttive inoulnts is to improve eroi (e presene of oxygen) ility y reuing e level of ye in e silge (high levels of ye n use heting). This ws similr to e report of Jonsson, [21] t some rins of ltte ssimilting ye grow well in n environment in whih e ph level is etween 3 n 8. Similr report ws lso reporte in e uies of Moon, [25] n Woolfor [26] t e i tolernt ye t ssimilte ltte (n usully not teri) re primrily responsile for e spoilge when expose to ir.
