5 GUY KRENZER Creation & Gastronomy Director - Executive Chef Lenôtre Double Meilleur Ouvrier de France There are vocations that impose themselves, and others that will certainly not exist without a hand of fate. Guy Krenzer's was certainly built by accident, whilst flicking through a book of 200 trades. His finally chose that of deli-caterer, "because that was all that there was". A nice twist of fate for this Tour de France companion. A rich experience from which he will keep the happy family spirit, transmission, sharing: all values that still exude in each of his dishes and his courses. Lover of cuisine in all its forms, his career is a sequence of successful experiences as reflected in his title of Meilleur Ouvrier de France in the deli category in 1988, in cuisine in 1996 and as guest in the famous show "Le Meilleur Patissier" in He who proudly confesses that his favorite dessert is "mother's plum tart" also explains quite simply that his favorite food is "that prepared by friends". Amazing you might say? Not really when you know that the chef's key word is: fun! The pleasure of sharing, learning, transmitting.. the time of a cookery class, Guy Krenzer transmits his passion, his tips and his recipes, because, as he likes to say, "If you're frightened about giving, you're already passed it!". 5

A truly phlegmatic character... or almost! Connoisseur of all liquids, fermented or not, or if you prefer, alcoholic or not, Olivier Poussier literally comes to life and glows when he talks about his job. This is the synonymous of passionate people with... passion! Olivier Poussier worked for two years as sommelier at "La Tour d'argent " in Paris before taking off to England for three years. A journey that allowed him, in addition to mastering his art further, to learn a language essential to any good sommelier. His return to France in 1988 marked the beginning of his story with Lenôtre. Head Sommelier at the Pavillon Elysée Lenôtre and Chef Sommelier of Lenôtre, this lover of French cuisine never ceases to improve and perfect. For that reason, since the beginning, he has always taken time to travel at least once a month to vineyards and to build relationships with wine producers. As he often says, "Behind every wine there is tenderness, emotion, and of course a winemaker". As Sommeliers we are only the messengers between the customer and the winemaker." He adds, "When I taste a wine, the first thing I think is: What am I going to associate it with? ". Here is the philosophy of the master, they go hand in hand. That the glass serves the plate or vice versa, it's the chemistry that develops between the two that creates a perfect harmony revealing the flavors of one and the other. 6

Its rotundas are lined with majestic trees and arranged in classical symmetry. The white façades are adorned with pilasters, columns and balusters, and surrounded by flower-decked terraces decorated with groups of sculpted angels and basins. The peaceful charm of this site, just a few minutes from the center of Paris, is an invitation to attend the most sumptuous celebrations. A decidedly elegant meeting place The 13 reception rooms of Le Pré Catelan Lenôtre, which are full of history, can accommodate up to 1,500 people and meet any requirements. Headed by Eric FINON, Meilleur Ouvrier de France (best craftsman of France) in 2011, a highperformance laboratory of 2,000 m², located in Mouans-Sartoux means it can meet with the most demanding of requirements in the organization of hospitality in the South of France, from Monaco to Marseille and from Saint Tropez to Aix en Provence, as well as supplying our Cannes retail store. Production workshop surface area of 2,000 m²: strict implementation of the food health and safety rules, within the scope of the HACCP, inspected on a regular basis by an outside approved service provider for a full traceability of the food chain. 15

Topped with a dome that allows light to flood in, this majestic circular building is today an Historic listed monument. Conveniently located 8 km from Nice and 10 km from the center of Monaco, La Rotonde Lenôtre has pride of place in Beaulieu-sur-Mer where the sea meets the mountains in a tropical paradise. The reception rooms of la Rotonde Lenôtre adapt to all private and business events and can accommodate 20 to 250 guests seated and 400 people for cocktails, with a walk-in space of 400m and a terrace overlooking the sea.
