158. YOUR R E S P O N S I B i l I T Y I N A B S T R A C T I N G J a Ja WANDERSTOCK... CORNELL UNIVERSITY X thought t h a t before I say a few words about your responsibility i n t h i s abstracting program of our6, I would refresh your memories by going over w i t h you f o r a few minutes the history involved i n the review of t h e l i t e r a t u r e i n the area of meats. I think most of ua have had occasion t o use the reports of t h e Research Review Committee of the Cooperative k a t Investigations. You w i l l remember t h a t they published a s e r i e s of f i v e volumes, the first two I believe i n '37, and subsequently they published additional ones i n '42 and '46. The Cooprative b a t Investigations Committee consisted of a limited number of people -- Anna Boller of the National Live Stock and V l a t Board, Jessie Alice Cline, who was with the Board a t that time, Our D r. Hall of Kansas, Bill Loeffel, Belle Lare, Ken Warner, 0. G. Hankins, Bob Hinaan, Sylvia Cover, and A. IC. Eeeley of the Bureau of Animal Industry. These people were charged w i t h the task of reviewing a l l of t h e l i t e r a t u r e r e l a t i v e t o ~ E a t 6published up u n t i l the time of t h e i r review. Well, I know from correspondence with B i l l Loeffel that although he did a wonderful job, he f e l t t h a t he really could have devoted the time t h a t he agent reviewing the l i t e r a t u r e benefiting himself and h i s i n s t i t u t i o n, but he f e l t t h a t t h i s was a s a c r i f i c e t h a t he had t o make f o r the good of t h e cause, and he and the o t h r members of the cormittee t h a t I have j u s t named did a tremendous amount of work i n reviewing the l i t e r a t u r e r e l a t i v e t o the given f i e l d. For instance, our D r. H a l l here reviewed a l l of the l i t e r a t u r e r e l a t i v e t o nethcds involved l a meat research, and Belle Lowe covered lard. They took one area i n mats, one form of subject-matter and did a l l of the reviewing in the p a r t i c u l a r subject-matter. Now when t h i s Reciprocal &at Conference was established m originally started, as you w i l l recall, discussing general problems, and then a t our fourth annual meeting the conrmitcee structure was set up which set up, among other committees, the Research Review Committee. You folks charged t h a t commfttee, of which I was chairman a t the time, with the reeponsibility of ascertaining the need f o r a l i t e r a t u r e review. Those of you who were present on t h a t occasion and a t subsepent Reciprocal Yeat Conferences remember that we a l l f e l t that there was a need f o r an organized review of the l i t e r a t u r e, and that we a l l agreed that we would cooy;erate t o the best of our a b i l i t i e s i n making t h i s review. You will r e c a l l, too, that a t that time we asked f o r volunteers t o do the abstracting and approximately 50 qf you agreed t o a b s t r a c t f o r u8. You w i l l r e c a l l, too, t h a t we bombarded you with letters and reminders and '

159. a l l s o r t s of things. A s is the usual custom i n response t o a committee, we did not get a very large number of returns from the abstractors. As a matter of f a c t, duriag the past year, with our approximately 50 abstractors (I have the figure here we worked it out yesterday), I think only about 16 responded t o an inquiry sent out by our Chairman, Zane Palmer, r e l a t i v e t o where they stood in abstracting the publications that they were assigned. - W e had trouble in the e a r l y stages i n getting f i n a n c i a l support t o set up the actual abetraction and, f o r the benefit of the newer members of' the Reciprocal *at Conference, the National Live Stock and Illeat Board very kindly made funds available t o us two years ago i n the amwt of a l i t t l e over $1,000 so that we could get started. We decided on the type of abstract we wanted and we are using the McBee cards which m y of' you, most of you 1 suppose, are familiar with. Last year a t our meeting we distributed the f i r s t set of abstract cards. As Al nientioned, I am sure that many of you have had occasion t o use those carda and have found then t o be uaeful, a t least i n i n i t i a l l y getting started on the l i t e r a t u r e review. It is the hope of our committee that we can p r o p r l y and completely cover a l l of the geriodicals that we listed when we first set up tlae a b s t r a c t review, b u t we cannot do it unlees you people cooperate with us. I know that we are a l l busy and i f each man got up and told us what he ha8 t o do every day of the year we would be here f o r the next two years. We are all very busy, but it has been my experience and I am sure it has been your experience that the busier you are the more things you seem t o be able t o do. Actuslly i n the area of abstracting the literature on mats, I t h i n k that we a l l owe it t o one another t o perform t h i s very v i t a l function and I think that we can all take t i m e out of our schedules. A1 mentioned that he is abstracting. Well, poor A 1 has t o cover Food Research, and you know how many articles appear on mats in t h a t publ i c a t i o n. Y e t he is very conscientious and be has turned i n abstracts religiously. We have several other men who are covering periodicals that cont a i n atremndouslylarge number of a r t i c l e 6 on meat. m n Bratzler i s covering Food Technology. B i l l Cole, w h a t are you covering? Actually, Bill Cole is one of our better responders i n the abstracting of' our publ i c a t i o n s. B i l l Brown 1s covering the Journal of Animal Science. It seem t o me that if fellows l i k e Bill Cole and m n Bratzler and Bill Brown and Al Barson, who certainly are busy 0. D., too. Esrcuse me, I don't want the Texans t o g e t against ne here and t o gang up on II~E? bec a u ~ ethere are too many of them. If' these people who are certainly very busy can take the time t o cover their periodicals promptly and g e t their abstracts i n t o the committee on schedule, it aeerns t o ~pet h a t thoee of u s who have been asked to cover periodicals that contain only a f e w a r t i c l e s on meat o r only on rare occasions can a l s o cover our publications. -- Now a8 a committee we have asswaed 8 number of objectives which e hope t o g e t a l l of the we hope t o acc<jmplish during the coming year. W publications on our l i s t abstracted up t o date through Decernber of t h i s e are going year before our next annual meeting r o l l s around next June. W

160. t o Study the abstracting assignwnts and revamp the assignwnts t h a t are necessary. We w i l l t r y t o remove the "dead wood," and t o e n l i s t some new blood, t o g e t 6om of t h a t iron pigmented s t u f f t h a t Bob Bmy was talking about. Maybe we can shoot into some of us a l i t b l e more pigment and g e t us t o the point where we can carry on these abstracting assignments. Actually, if any of you feel t h a t you would l i k e t o be relieved from the abstracting work we w i l l be happy t o entertain your wishec. We want the group that is abstracting r e a l l y t o abstract, and if a person feels t h a t he cannot f u l f i l l the responsibility, if he w i l l please l e t us know we trill remove him f r o m the l i s t of abstractors. We should l i k e t o encourage graduate students t o participate in the abstracting work. W e are going t o make an attempt t o t r a n s f e r from the a b s t r a c t form t o the a c t u a l printed card a l l of the abstracts t h a t we have had i n storage temporarily plus thoee that we w i l l be getting from you p o p l e during t h i s year, so that they w i l l be available before our next meeting. Now I should l i k e t o ask f o r additional volunteers.. i n abstracting. You w i l l r e c a l l that we will ask you t o a b s t r a c t one o r two publications. You w i l l go through these publications, going back t o January, 1946, and through the current issues f o r a r t i c l e s on mats. We have f o m with which the new men are not familiar, but we w i l l acquaint them by mail with the format that we follow. I am using the e d i t o r i a l II we." Actually I am referring t o Zane Palmer who is chairman of the committee. He w i l l inform you as t o the mechanics of aljstracting. MR. I.IANDERSMCK: We would l i k e a t this time t o ask f o r volunteers. Is it a l l r i g h t with you, A l, t o have these people stand up 80 we can take t h e i r n a E s down? I would rather do t h i s right now, because if we ask t h e m t o send us their names, we w i l l be l o s t. I d i l l those of you who w i l l be willing t o abstract one o r two p r i o d i c a l s who are not currently abstractiw f o r the Reciprocal &at Conference please stand and give your names? MR, SCHULTZ: t e n years? Is t h i s abstracting the issues of a journal for MR, bianderstock: Yes, we are attempthg t o go back t o '46, because the reports put out by the conf'erence s e t up years ago cover through '46. So we are s t a r t i n g with '46 and working up t o the current issues. We a r e trying t o keep current though. (The following persons volunteered t o make abstracts : H. ll* Schultz Oregon State College Brnest Briskey University of Wisconsin

161. Carroll Schoonover University of Wyoming R. D. Havelaer Ohio State University R. M. Boyer Ohio State University Robert A. bbrkel University of bfisconsin James f?. Carpenter University af F l o r i d a R. H. ALsmeyer University of Florida) MR, XEUY : I wonder if it wbuld be possible t o f i n d out what journals we are. supposed t o be abstracting. I wa6 on the l i s t and I had been abstracting a Journal and had gotten it up t o date from 1946 t o 1954, But last year we were t o l d that reassfgments would be made and 1 have been waiting. I am s t i l l interested i n abstracting. MR. WAM>ERSTOCK: We will clarify that. You are on the l i s t. Actually, those of u6 on the conadttee who have been involved in the abstracting b o w that it is an awfully detailed job p a r t i c u l a r l y from the standpoint of the chairman because he ha6 t o have all of the materials. You will recall that Zane Palmer W&B appointed chsirman of the Cummittee last year. It wa8 really quite a migration t o move a l l of the materials darn t o Zane. Of' couree, Zane a160 had Just gotten darn t o Florida, So he was really behind tbe 8 ball i n terms of taeks t o perform and t h a t is wby we d i d n ' t have the reassignment, but we are d e f i n i t e l y goin& t o reassign where necessary and a l l of the current abstractors w i l l be informed of their responsibilities. That w i l l be all then. Thank you v e r y much. CHAIRMAN PEARSON: We have a few minutes f o r discussion. The chairman of t h e conference next year w i l l lead it. year. e are going t o have a new t i t l e f o r it lzext MR, BLUMER: W W e are going t o c a l l it the perennial plea. You know that l a s t night they had a m e t i n g. I forgot t o attend and I thought I should contribute 6 0 m t h h g. I got t o thinking about it. I woke up e a r l y t h i s morning and t h i a is w h a t I came up with. W e have been operating on the lower echelon and maybe we had b e t t e r go a l i t t l e higher up t o the deans.

It i s a r a t h e r humbling f a c t when you think about the number of mat publications that are coming out each year, and one of these days it is going t o be a l o t easier t o do the research yourself than t o do the abstracting, So we might give it a l i t t l e thought f o r those who w i l l follow us in mny years t o come and if we will keep this up t o date now I a m 8ure they w i l l appreciate it. A r e there any comments from the f l o o r? DR. KLINE: Tom, I have j u s t one question I would l i k e t o ask. Is it poseible t o secure an index card only? Somehow I have misplaced o r l o s t mine. It d i d n ' t g e t worn out, but it is missing.. MR WANDERSTOCK: Drop txe a l i n e and I w i l l send you one MR. BLUMER: Am there other comments? Where is Zane Palmr? Do you have anything t o add? MR. PAUER: No, I would j u s t say t h a t I think J e r r y did a wonderful Job of presenting the information and making a plea. I think quite highly of Jerry, so do everything he said. MR, RENRICKSON: now have a set of cards? I have a question. How many i n s t i t u t i o n s MR. WANlXRSTOCK: You w i l l r e c a l l that our best estlmate of the need f o r cards was about 100 sets and 60 we actually prepared a hundred. To date we have sold 47. Many of you said you would buy more than one set, b u t when the pay d i r t came i n t o the picture, Texas d i d n ' t have enmgh money t o order more than 15. So a c t u a l l y we have been a l i t t l e l e t down by the response order-wise. Not as many sets have been ordered as we anticipated selling t o the people who said they would buy them. Most of the packers have bought one o r two s e t s. Of course, t h i s i s a very good service f o r them. But among the i n W e s t i l l have many sets s t i t u t i o n s our coverage i s n ' t too g r e a t. available f o r sale, and i f someone can think of a mean& of promoting the s a l e of these sets we would l i k e t o hear it. You will recall that I mentioned that the Board had loaned us some money, and you w i l l remember that a t the last meeting we gave them a check i n the amount of $750, I think, i n -part paynent of i t s o r i g i n a l outlay. The c o m i t t e e would very m c h l i k e t o refay the Board completely but it cannot u n t i l it s e l l s more s e t s. So if we can s e l l additional sets, we w i l l be able t o repay the Board and s t i l l have a k i t t y t o use f o r f u t u r e sets. DR, KLINE: What is the price per s e t? b R O WANDERSTCCK: portation charges. Twenty-five d o l l a r s per set plus trans- MR. BLUNER: W e have used our a l l o t t e d t i m e now. If there are f u r t h e r questions, speak t o the comittee later.

163. Now I w i l l turn it back t o the Chairman. e wish t o thank the Research Review ComCHAIREYUJ PEARSON: W mittee for its work during the m e t year and we hope that it will continue. i tk nar come t o the Research Methods Committee's report. The first paper t o be presented by that conaalttee will be e n t i t l e d, "The Source and Significance of Microorganieme on MEat," and it will be presented by D r. John Ayres of Iowa State College. DR. AYERS: Thank yau, Mr, Chairman. Gentlemen, I t h i n k we will find that i n the future the chemist and the bacteriologist w i l l have more t o say and more of an impact on the meat industry than they have had in the past. They are now beginning t o vindicate so= of' thf! rea8ons f o r their studying meat producte. Up u n t i l a few years ago most of' the study was undertaken in line with veterinary i n s p c t i o n, carcass evaluation, etc., but I should like t o present a d i s s e r t a t i o n on "The Source and Significance of Microorganisms on &ate,"
