Anyone, from a technician in the lab to an operator at the line, can measure water activity of most samples in five minutes or less to ±0.005 a w specifications. UNAFFECTED BY VOLATILES The laser beam, which is less than one nanometer wide, is specific for the commonly occurring isotope of water. Other vapor molecules, including the vapor of different water isotopes, do not affect the reading. The result: complete moisture analysis in about five minutes for most samples, with some big advantages over traditional moisture meters. MOISTURE SORPTION ISOTHERMS To calculate moisture content using water activity requires an understanding of the relationship between the two parameters. This relationship, referred to as the moisture sorption isotherm, is complex and unique to each product type. Combining the precision of oven drying and the efficiency of a moisture balance, the TrueDry CV9 is one of the newest products made for the modern lab. It uses chilled mirror technology to create high resolution moisture sorption isotherms based on hundreds of data points in about 48 hours. An easy to use software program simplifies data collection and analysis. The relationship between water activity (a w) and moisture content at a given temperature is called the moisture sorption isotherm. This relationship is complex and unique for each product due to the different interactions (colligative, capillary, and surface effects) between the water and the solid components at different moisture contents. An increase in a w is almost always accompanied by an increase in water content, but in nonlinear fashion. Moisture sorption isotherms are sigmoidal in shape for most foods, although foods that contain large amounts of sugar or small soluble molecules have a J-Type isotherm shape. As the sample dynamically takes up or loses moisture, the change in humidity is determined directly using a dew point sensor and the weight change is tracked with a precision balance to create a detailed moisture sorption isotherm for the sample. Unopened vials have a one year shelf life. Available in boxes of 50 vials. CHOOSING YOUR STANDARDS The components used by instruments to measure water activity are subject to contamination which may affect the performance. When this occurs, it changes the accuracy of the instrument. This is what is called a linear offset. Therefore, frequent verification assures you that your is performing correctly. Linear offset should be checked against two known verification standards daily, either once per shift or before each use. Verification standards are specifically prepared unsaturated salt solutions having a specific molality and water activity value which are accurately measurable. Using verification standards to verify accuracy can greatly reduce preparation errors. For batch processing, the instrument should be checked regularly against a known standard of similar water activity. It is also a good idea to check the offset with a standard of similar water activity when the general water activity range of your sample is changing.
