3 Moisture Analyzer Moisture Control in Lecithin Powders Lecithin is a natural emulsifier frequently used in the food industry and an essential component in many chocolate and candy formulations. When it comes to moisture control in the production of food grade lecithin, one of the world s largest manufacturers - Archer Daniels Midland Company (ADM) with its headquarters in Decatur, Illinois relies on METTLER TOLEDO. Lecithin - More Than an Emulsifier Lecithin is a natural ingredient frequently used in the food industry for its emulsifying and stabilizing effects. Lecithin is an essential component in chocolate and confectionery production as it contributes to the smooth melt of chocolate, improves the softness of chewing gum, facilitates the cutting of caramels and minimizes oiling out of toffees. To meet the food manufacturers demand for different functionalities, ADM s confectionary division provides different grades of lecithin. Archer Daniels Midland Company is one of the largest agricultural processors worldwide and provides over 1000 ingredients alone for food applications. Halogen Moisture Analyzer HB43-S HB43-S for Efficient Process Control ADM researchers have developed an ultra filtration process for de-oiled lecithin in powdered form. The moisture content of the de-oiled lecithin must lie between 7-8% to ensure the powder remains easyto-mix and can be stored well. Every two hours during the 24/7 operations, the production lines are controlled by sample analysis in the QC labs. 4 LIQC Unsurpassed Performance METTLER TOLEDO DERE System The Takasago International Corporation in Singapore manufactures high quality fragrances and flavorings to be later used in food manufacturing. The fragrance quality assurance laboratory was looking for the best method to measure density and refractive index in order to control the quality of their products. They found that the new LiQC measurement system from METTLER TOLEDO is the perfect choice. Customer Requirements Takasago offers custom-made flavors and fragrances worldwide and it is extremely important for them that all raw materials used in manufacture are of the required specification. To achieve this, they measure the density and refractive index of all ingredients used. The Senior Manager, Mr. Tay Wee Siong, was looking for an instrument which could offer the automated, trouble-free testing solution of both parameters, as the lab handles a minimum of 40 samples per day, as well as a software which is user friendly and free from operator errors. METTLER TOLEDO s Offer The solution METTLER TOLEDO proposed included the DR40 combined density and refractive index instrument with a SC30 sample changer plus the LiQC PC software. The automated system fulfilled the need for automatic handling with the added benefit of using over pressure to pump in samples in order to avoid potential contamination. It has a programmable regime which ensures full system cleaning, rinsing and drying between samples with a near mechanical scrubbing action. As a result of these benefits, once groups of various samples or individual samples have been setup and started, there is no further requirement for the presence of an operator. Additionally, as the tested fragrance samples are of a high value, the ability of the METTLER TOLEDO system to return the samples to the vials afterwards saves money and also allows for re-testing at a later stage if necessary. LiQC software is a product driven system which tests according to the required method parameters assigned for a specific product type this eliminates operators inadvertently analyzing a specific product with the wrong set of parameters. Additionally, the LiQC software will check measurements for potential problems (e.g. air bubbles), inform the operator and repeat the measurements. Mr. Tay states that, the LiQC system fulfills our need for automatic sample handling with the benefit of knowing we can redetermine any incorrect measurements. This means, that our lab assistants can spend their time more valuably on other projects. The LiQC software is extremely advanced so that sample handling and transcription errors are non existent. Compact and Space Saving The complete DR40 automated system with LiQC software has an extremely small footprint - important in a lab with limited space. Mr. Goh Ric Kee, the assistant manager, agrees that, it was a 4

Water determination is a must for quality control. With the new Karl Fischer Titration from METTLER TOLEDO, analysis is completed within a few minutes with one click. Water Determination Made Simple The standard method for the determination of the water content in a wide variety of samples is the Karl Fischer Titration. This application is specific for water, as the titrant solution reacts with the water molecules in a stoichiometric reaction. The volume of titrant added until all water is gone is used for the calculation of the water content of the sample. The new Karl Fischer titrator from METTLER TOLEDO performs all the steps with one key stroke. All you need is to add sample to the vessel and press one button to start the titration. After a few seconds, the amount of water found so far is shown on the large color screen. One or a few minutes later, the result is displayed on the screen, printed out and/or saved in the database of the PC software LabX titration. Solvent Manager Ensures Safety Aldehydes and ketones are samples frequently analyzed in the flavors and fragrances industry. To avoid side reactions, special reagents for aldehydes and ketones are commercially available. The chemicals are handled by the Solvent Manager, which is a liquid handling device connected to the Karl Fischer titrator. The user can exchange the solvent or reagent with One Click on the touch screen and avoids any contact with the chemicals. 7 TGA/DSC 1 The Way to A Good Perfume Everyone expects a decent perfume to provide a pleasant and distinctive scent. At the same time, the fragrances should remain perceptible for as long as possible at a constant level of intensity. For this reason, fragrances used in perfumes are nowadays often encapsulated in socalled delivery systems. The release of the fragrances then occurs under control, allowing the perception of the perfume to be optimized with respect to intensity and time. Amazing Romascone with TGA The encapsulation of fragrances in suitable delivery systems has become a topic of great importance for perfume manufacturers. Identification of the most suitable delivery system from the large number of potential carriers requires a rapid analytical screening method that can measure the thermal stability and release performance of a fragrance from the delivery system. Thermogravimetric analysis (TGA) is an excellent technique for this purpose. were measured in alumina crucibles using a purge gas flow of nitrogen at 20 ml/ min. The mass fraction of the delivery system made up 40% of the total sample mass. The measurements were performed isothermally at different temperatures. The delivery system was in the rubberyelastic state. The results in figure show that a bend occurs in the TGA curve after a certain time (except for the measurement at 25 C where the measurement time was not long enough). This bend occurs when evaporation is limited by the transport processes in the polymer (diffusion). The slope of the TGA curves before the bend is not constant either. The method described here is easy to perform and allows delivery systems to be rapidly characterized and optimized. } This example describes the investigation of the release of Romascone using thermogravimetry. Romascone is a fragrance that finds application in women s perfumes. The delivery system utilizes polymeric nanoparticles based on crosslinked vinyl acetate. The investigations described here were performed using a METTLER TOLEDO TGA/DSC 1 equipped with a small furnace. Sample masses of typically 8 mg (fragrance and nanoparticles together) Evaporation of Romascone from a delivery system in the rubbery-elastic state.
